For Miumori Mizucha, Shutaro Hayashi uses the finest leaves, especially those of the shaded cultivar Asatsuyu and those of the unshaded cultivar Yabukita.
To finish the composition, Shutaro completes this Mizucha with a small amount of matcha from the shaded cultivar Kanaya Midori.
